A traditional tapa in Spain! It is an omelette or pancake-like fritter. Variations of tortillas may include:
• Potatoes, scallions, mushrooms, sweet peas, and shallots.

• Bandera Española: Potatoes, ham, sweet peas, scallions, tomatoes, shallots and cheese.
